i know.
not the most imaginative nor the most filling. and this is usually due to my mostly still asleep state or just the general need for coffee before anything else is going to happen. but every once in awhile i wake up with the desire to whip up some pancakes or french toast. or better yet, go pay someone else to make them for me. the one thing that i have not really ventured toward has been the "muffin." whenever i think of muffins i think of the giant, overly sweet, cosco versions that leave a residue on the roof of your mouth....gross. but then i found this recipe and my whole entire view of muffins has changed. you know when something is so good that you don't eat it (or am i the only one who does this)? you know, when you want to make something last as long as possible so you can savor it? these are like that.
muffin:
1 1/2 cups flour
1 tsp baking soda
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 mashed bananas
3/4 cup sugar
1 egg, beaten
1/3 cup unsalted butter melted
crumb topping:
1/3 cup brown sugar
2 tbsp flour
1/2 tsp cinnamon
1 tbsp butter
1. oven to 375, grease muffin cups or use muffin liners
2. mix flour, baking soda, baking powder, salt
3. in another bowl beat bananas, sugar, egg and melted butter then mix into the flour mixture.
4. fill muffin tins 3/4 way full
5. in a small bow mix together the brown sugar, flour, cinnamon, and butter. (i used my fingers to distribute the butter throughout this grainy mix because nothing else really worked. get messy people).
6. bake for 18-20 minutes (18 was perfect for me). use toothpick to decide if they are done.

7. try your hardest not to eat them all at once or right out of the oven (i failed at the latter).
